It’s been so long since I’ve done any baking, I suppose since we left London we haven’t really had a proper kitchen to bake in! The arrival of September however, bought with it the urge to bake, so I thought it was about time I made the most of my sparkly new kitchen! I’ve had a real craving for all things chai recently, so whipping up some spicy Chai Muffins seemed like the perfect way to satisfy that craving!
This recipe is one for the real chai afficianados out there, it’s a pretty strong flavour! You could always tone it down by using less spice + more vanilla for a hint of flavour, but if you like a good strong chai, you’ll love these!
Chai just seems like such an autumnal flavour, doesn’t it!
The muffins themselves are super easy to make – you know me, I don’t like recipes with more than four steps. The ingredients are all things you’ve probably got in your cupboards too, so super easy to make! It took me about twenty minutes to make the batter and icing, and then they take around 16-18 minutes to bake.
I feel like the icing really makes these muffins! Without the icing they aren’t super sweet, so having the icing gives them a little sweet kick! If you’re after a more subtle chai flavour you could skip the spices in the icing and opt for a vanilla buttercream, or plain flavour instead! I personally like the strong chai flavour, but the nice thing about this recipe is that it’s super simple and easy to adapt!
